Ricotta, mozzarella and feta on a white pie.
Three Cheese Pizza
For the cheese purists. A ricotta base, a blanket of mozzarella, and a scatter of feta — three cheeses, no red sauce, each pulling in a different direction. The feta is what makes it ours: a little tang that keeps a white pie from getting heavy.

What goes on it
- • Fresh whole-milk ricotta base
- • Low-moisture whole-milk mozzarella
- • Crumbled feta
- • Garlic oil brushed on the crust, olive-oil finish
- • 24-hour cold-fermented dough — no tomato sauce
How it's made
Garlic oil on the stretched dough, mozzarella, dollops of ricotta, then feta crumbled over the top. Into the brick oven for 6–8 minutes; a crack of black pepper and a drizzle of olive oil at the cut station.
Pairings
A Greek or Arabic Salad leans into the feta. Add spinach or fresh tomato for a loaded white pie.
Ordering tips
Well-done deepens the feta and crisps the bottom. A great base to add halal sausage or grilled chicken.
