Buffalo Chicken Pizza
The Buffalo Chicken Pizza is the single most-ordered item on our menu. It started as a special in the early 2000s when one of our line cooks started topping a personal pie with leftover wing sauce; within a year it was a permanent item, and twenty years later it's still what most first-time customers order on a recommendation.

What goes on it
- • Halal-certified all-white-meat chicken, cubed (about 6 oz on a large)
- • Frank's-style buffalo sauce, tossed with melted butter and a hint of garlic powder
- • Low-moisture whole-milk mozzarella from a Wisconsin producer
- • Our 24-hour cold-fermented dough — high-gluten flour, water, salt, oil, yeast
- • Ranch drizzle (in-house buttermilk-based) finishes the pie post-oven
How it's made
The chicken is poached, cooled, cubed, and tossed in the buffalo sauce when ordered — not pre-mixed. The dough is stretched to size by hand, sauced (lightly — we don't want to compete with the buffalo), cheesed, then topped with the chicken. Into the brick oven at 550°F for 7–9 minutes depending on size. The ranch is drizzled across the pie after it comes out — it would scorch under the heat.
Pairings
A side of celery and blue cheese takes you to a sit-down-restaurant wing-night vibe. A 2-liter Sprite or a couple of Ayrans cuts the heat. For a bigger meal, pair with garlic-knots and a Garden Salad.
Ordering tips
Order it well-done if you like the crust extra crisp — the buffalo sauce holds up to it. Personal 10" feeds one; small 12" feeds two; large 16" feeds three with sides; the 28" party pie feeds 12–15 and is our most-ordered office-lunch pizza. Add a ranch side cup for extra dipping.

- How is this different from your Crispy Chicken Ranch?
- Same 24-hour dough, same whole-milk mozzarella, same buttermilk ranch on top. The chicken is what changes. Buffalo uses all-white meat that is poached, cooled, cubed, and tossed in the wing sauce when your order comes in. The Crispy Chicken Ranch uses a hand-breaded cutlet fried to order and chopped. We also sauce the Buffalo lighter, so the tomato is not fighting the wing sauce.
- Is it too hot for kids or someone who does not do spice?
- The heat rides on the chicken, not the crust. The buffalo sauce is tossed with the cubed chicken, and what is under the cheese is our tomato sauce, applied light. So the burn comes bite by bite and a kid can eat around it. The sauce is cut with melted butter rather than poured straight, and the ranch goes on after the oven. Celery and blue cheese or an Ayran handle the rest.
- Does the buffalo sauce make it soggy on a delivery run?
- Not usually. The chicken is not sitting in sauce all day - it is poached and cubed ahead, then tossed in the buffalo when the ticket comes in, and the tomato sauce underneath goes on light, so there is less liquid under the cheese to start. Order it well-done if you want insurance on the crust; the buffalo holds up to it. Our own drivers cover Clifton in 15 to 25 minutes, with no third-party handoff.

- Yes — every meat on this pizza, like every meat on our menu, comes from a halal-certified supplier, and the kitchen, fryer and slicer are halal-only. Nothing non-halal is prepared or stored on the premises.
