- • Low-moisture whole-milk mozzarella
- • House tomato sauce (San-Marzano-style, lightly cooked)
- • 24-hour cold-fermented dough
- • Buttermilk ranch drizzle, applied after the pie comes out of the oven
How it's made
The chicken is breaded and fried fresh — not pre-cooked. After frying, it's chopped into bite-size pieces and laid on top of a fully sauced and cheesed pie. Into the brick oven; out at 7–9 minutes. Ranch goes on at the cut station so it stays creamy and visible.
Pairings
Garden Salad and garlic-knots are the most common pair. A 2-liter Sprite or a Snapple. The Caesar Salad also goes well.
