Halal Pizza (the Classical)
A cheese pizza is how you judge a pizzeria. Anyone can hide behind toppings — wing sauce, breaded chicken, BBQ glaze. A plain cheese pie is just dough, sauce, and cheese, and you can taste every choice the kitchen has made.
What goes on it
- • 24-hour cold-fermented dough (high-gluten flour, water, salt, sugar, yeast, olive oil)
- • House tomato sauce — San-Marzano-style crushed tomato, garlic, oregano, salt
- • Low-moisture whole-milk mozzarella from a Wisconsin producer
- • Finishing olive oil at the cut station (optional)
How it's made
Dough is balled in the morning, retarded in the walk-in for 18–24 hours. When you order, it's hand-stretched, sauced from the center out, cheesed (we don't over-cheese), and baked at 550°F in the brick oven for 6–8 minutes. Out, cut, boxed.
Pairings
