How it's made

Sauce, cheese, then turkey ham and pineapple spread evenly so every slice gets both. Into the brick oven for 7–9 minutes — long enough to caramelize the pineapple edges without drying it out.

Common questions

What's the difference between this and just adding pineapple to a cheese pie?
The turkey ham. Pineapple on its own is one sweet note sitting on cheese; the diced halal turkey ham, standing in for the pork the classic version uses, puts a salty bite in the same mouthful, which is the whole point of the combination. Both toppings go on spread out rather than clustered in the middle, so a slice from any part of the pie gets some of each.
Is the whole pizza sweet, or only the pineapple?
Only the pineapple. Underneath it is the same house tomato sauce and low-moisture whole-milk mozzarella we put on a plain cheese pie, and nothing on this pizza is sweetened to match the fruit. The sweetness is one topping playing against salty turkey ham and plain cheese, and the pineapple edges darken in the brick oven, which pulls it further toward roasted than candy.
Does the pineapple leave the crust wet?
Not the way it bakes. Seven to nine minutes in the brick oven is hot enough to caramelize the edges of the pineapple rather than let it sit and steam into the cheese. The dough underneath is cold-fermented for a full day, which gives the slice enough backbone to carry a wet topping without going limp at the tip. Ask for it well-done if you want the bottom crisper still.
